coconut pistachio lemon bites
What’s so amazing about these little guys is that they’re sweetened only by dates, no added or refined sugar. Not even maple syrup or honey. Oh, how sweet it is!
Just simple, whole foods ingredients. Not much else to say really, I’ll let these little bites speak for themselves.
coconut pistachio lemon bites
Ingredients:
- 1/2 cup pistachios, ground
- 1/4 cup tahini
- 1/4 cup coconut oil, melted
- 4 dates, soaked, made into a paste
- zest of one lemon
- ground coconut flakes (or shredded coconut) to coat
Instructions:
Mix all ingredients together except the coconut flakes. Roll the mixture into balls (they’ll be super sticky and moist) and coat with the coconut flakes, this will help them dry up. Place the bites onto a tray coated with parchment paper and pop in the freezer for at least one hour. Once they’re frozen you can transfer them to a container for storage in the fridge, or leave them in the freezer. This should make 8-10 little bites, depending on the size and how much of the “batter” you eat will you’re making them, not that I have that problem or anything…
