kale spinach dip

I’m heading up to the cottage for a weekend of fun in the (hopefully) sun! What better snack to bring up for the fam than a dip that’s practically a salad?!

I’m pretty sure by now everyone knows the benefits of kale. In recent years it’s become like veggie royalty. Kale is jam packed with anti-oxidants that can help with cancer prevention and vitamin K which is an important nutrient in regulating inflammation – the root causes of many health disorders. Plus it helps the body detoxify (may be necessary after this weekend;) ) and bajillion other awesome things… but, let’s get right down to business.

kale spinach dip

Ingredients:

  • 1 cup kale
  • 4 cups spinach
  • 3 oz goat feta cheese
  • 2 green onion chopped
  • 1/2 cup veganaise or homemade mayo
  • 1/2 cup plain sheep yogurt
  • two cloves garlic
  • 1/2 tsp oregano
  • 1/2 tsp rosemary

Instructions:

Steam spinach and kale until it starts to wilt, then mix with ingredients in blender or food processor; put in fridge to cool. That’s it!
