Ohh life.

Just when you think you got a handle on things… you don’t.

I took a wee, unintentional, hiatus from this here blog and a lot has changed in the mean time. I was busy, overwhelmed and under-inspired. I’m going to try and slowly easy myself back into the whole blogging thing.

Here it goes…

2016 has been a year of big change for me so far. Change and taking chances. And fear.

I don’t fear change itself, in fact, I welcome it with open arms. What’s most scary about change is the fear of the unknown. Fear and me have a funny relationship. My anxious homies out there know that all anxiety really is, is fear of the unknown. Something in the future that hasn’t happened, and probably won’t happen, but it miiiiight happen, so let’s spend 24/7 worrying, juuuuuust incase it does happen! That’s some logic right there.

Despite my fear, me and my love took a chance, packed everything up in a U-haul and hauled ass outta Toronto. Scary. We didn’t move to the ‘burbs either, we moved to the boons. I’m talkin’ livin’ on a dirt road, can’t get cell phone service, kinda boons. As we drove away from the lives we knew and sailed into the sunset, we looked at each other with wavering smiles. WTF are we doing? This could be the best decision we’ve ever made, or the worst.

Oh and I also got a new job, in a new town where I knew no one and nothing. What could go wrong?

I guess one outta two ain’t bad, right? I think Meatloaf said something about that…

A couple months later we have settled in nicely into our new home and even got another kitty. How many cats is too many? #askingforafriend

I am loving the country life and it feels so natural to be living in nature. Imagine that?! Our new place is beautiful and serene. There’s deer, bunnies and wild turkeys everywhere. A river we can swim in with trout jumping around. Fresh air! Trees galore. Sometimes I have to pinch myself to make sure this is all real. I find myself stopping what I’m doing and thinking about how grateful I am to be living here and how blessed I am. Driving down a country road watching the sunset is a gentle reminder of how beautiful life really is. It fills me with all the feels.

The job, well, that didn’t work out so well, but I guess you can’t win ‘em all. Some might even say it is the Universe guiding me back onto my correct path (ahem, thanks Universe, love you!). I thought I had things finally figured out, but as it turns out, I don’t! And I guess I never will? Is that just life?

…. it is.

For now, what I know to be true is:

CHANGE = GROWTH!

Boy have I grown a lot these past few years.

On the bright side, I’m working on starting a new business here, which is exciting and scary. Hint: it has to do with FOOD. Stay tuned…!

In the mean time, I’ll leave you with one of my tried and true recipes. Behold my vegan, gluten-free morning glory muffins. 

I make these muffins a little differently ever single time. A little more of this, a little less of that, swapping out one thing for another. But every time they turn out morning glorious!

If I don’t gobble them all up right away, I store them in the freezer for a great healthy snack on the go. I love grabbing one of these hearty morning glory muffins on the way out the door when I have an early morning.

gluten-free morning glory muffins

Ingredients:

  • 1 shredded apple
  • 1 shredded carrot
  • 1 cup shredded zucchini
  • 1/2 cup shredded coconut
  • 1 cup crushed walnuts (or nut of choice)
  • 1 cup cranberries
  • 1 egg (or flax egg to make vegan)
  • 1/4 cup maple syrup
  • 1/2 cup melted coconut oil
  • 1.5 cups gluten free flour (I use Bob’s Red Mill Gluten-Free Flour Blend)
  • 1 tsp baking soda
  • 1 tbsp cinnamon

Directions

Preheat oven to 350. Grate the apple, carrot and zucchini or throw them all in a food processor. Mix all ingredients together in a bowl until combined. Evenly scoop into muffin tin and bake for 20-25 minutes.
