s'mores cookies

When I was young I didn’t like s’mores. Not because they’re not delicious, but because they’re messy to make and the process of assembling them gave me anxiety.

Well younger me, do I have a solution for you, you little weirdo!

Introducing, the vegan and gluten-free s’mores cookie! Solving anxious kid’s problems since 2016. No sticky fingers, no flaming marshmallows poking an eye out, no melting chocolate smeared all over your face. Just one damn good cookie with all the s’mores fixins.

Last year I posted a recipe for homemade marshmallows and graham crackers (they were a hit btw!). With the long weekend coming up, I didn’t have time for the extra steps and I had some Dandies vegan marshmallows hanging around that needed using up. I changed up the graham cracker recipe to make it a little more cookie-like, added some chocolate chunks and voila – s’mores cookie!

Here’s what they look like fresh out of the oven. They have the cutest little mushroom hats and here's my kitty:

 

 

Not to toot my own horn, but I’ve really outdone myself this time, these babies are gooooooood.

s’mores cookie {vegan + gluten-free}

Ingredients:

Wet:

  • 3 tbsp melted coconut oil
  • 3 tbsp blackstrap molasses
  • 2 tbsp almond milk
  • 2 tbsp maple syrup
  • 1/2 tbsp ground flax

Dry:

  • 1 cup gluten-free all purpose flour (I used Bob’s Red Mill)
  • 1 cup GF oat flour (I blended my oats up in the magic bullet to make oat flour)
  • 2 tbsp coconut sugar
  • 2 tsp cinnamon
  • 1/2 tsp fine grain sea salt
  • 1/2 tsp baking soda
  • 1/8 tsp ginger
  • 1/8 tsp nutmeg
  • 1/4 – 1/2 cup chocolate chunks (I used Enjoy Life)
  • 1 marshmallow per cookie (about 10 – I used Dandies)

Directions

  1. Mix all wet ingredients.
  2. In blender, blend oats until they are a flour-like consistency. Then mix all dry ingredients together in a separate bowl.
  3. Combine wet and dry ingredients.
  4. Add in chocolate chunks
  5. Preheat oven to 350.
  6. Using a large spoon, scoop batter onto parchment paper lined baking tray. Using your finger, pat down little divots in the middle of each cookie, place marshmallow inside. 
  7. Bake for 12 minutes and then transfer to a cooling rack.
