strawberry rhubarb crumble smoothie
I feel a little bit naughty calling this a smoothie. When I think of smoothies, I think of a nutritious meal substitute that is packed with veggies and greens. Truthfully, this is more like a milkshake. It’s THAT good. Would I have it or breakfast? Not so much. Would I have it when I’m needing a sweet treat to cool me down on a hot summer night? Abso-f*cking-lutely. Pardon my french.
This recipe is inspired by my love for rhubarb and a post by Genuine Health. For the topping, I used the leftover crumble from my coconut lemon curd parfait. Talk about decadent, it’s like drinking pie. For realsies. The thing about rhubarb is that it’s a vegetable. What?! I know, so technically you are getting veggies with this smoothie. I may have to rethink my previous breakfast comment… Rhubarb is high in fibre (guts!), vitamin K (bones!), C (immunity!), A (anti-oxidants!) and B vitamins (energy!).

Smoothie Ingredients:
- 1-1.5 cup nut milk
- ½ cup rhubarb
- 1 cup frozen (or fresh) strawberries
- 1 Tbsp nut butter
- 1 scoop vegan protein, vanilla flavoured

Instructions:
Place all smoothie ingredients in a blender, and blend until smooth. Pour into a jar or glass and top with crumble.
